  1. 1. Pour the milk, sugar, vanilla sugar, and a pinch of salt into a large pot.
  2. 2. Heat the mixture on the stove until it starts to boil.
  3. 3. Stir the mixture with a whisk while you slowly pour in the wheat semolina.
  4. 4. Let the mixture come to a boil again for a short moment.
  5. 5. Remove the pot from the heat and place a lid on it.
  6. 6. Let the semolina rest for five minutes.
  7. 7. During this time, separate the egg yolk from the egg white.
  8. 8. Whip the egg white with a whisk until it forms stiff peaks.
  9. 9. Stir the egg yolk into the warm semolina pudding.
  10. 10. Add the butter and keep stirring until it has completely melted.
  11. 11. Gently fold the egg whites into the finished pudding at the end.
  12. 12. Serve the pudding with homemade compote, a cinnamon-sugar mix, or brown butter.
