  1. 1. Separate the eggs. Carefully lift the egg yolks away from the egg whites.
  2. 2. Whip the egg whites in a clean bowl using a hand mixer or whisk until stiff peaks form.
  3. 3. Whip the cream in a separate bowl until stiff peaks form.
  4. 4. Place a pot with a little water on the stove and heat it gently.
  5. 5. Place a heatproof bowl over the pot, making sure it does not touch the water (double boiler method).
  6. 6. Add the butter and chocolate to the bowl over the pot.
  7. 7. Stir the ingredients slowly until they are completely melted and smooth.
  8. 8. Remove the bowl from the heat and set it aside.
  9. 9. Place the egg yolks into a large, clean bowl.
  10. 10. Add two tablespoons of hot water to the egg yolks.
  11. 11. Whisk the egg yolk and water mixture with a whisk until creamy.
  12. 12. Add the sugar to the egg yolk mixture.
  13. 13. Continue stirring until the mixture looks light and creamy.
  14. 14. Add the melted chocolate and butter mixture to the egg yolk cream.
  15. 15. Stir everything gently until well combined.
  16. 16. Gently fold the stiffly whipped egg whites into the chocolate mixture.
  17. 17. Gently fold the stiffly whipped cream into the mixture as well.
  18. 18. Use a spoon or whisk for mixing, but do not use an electric mixer.
  19. 19. Place the finished mousse in the refrigerator.
  20. 20. Let the mousse chill for at least two hours.
  21. 21. Take the mousse out of the refrigerator shortly before serving.
  22. 22. Do not serve the mousse too cold.
  23. 23. Sprinkle chocolate sprinkles over the mousse as desired.
