🍽️ Mediterranean Oven Vegetables with Feta

Ingredients
- lots of olive oil
- 500 g potato(es) (small)
- 400 g pointed pepper, red
- thyme
- marjoram
- oregano
- rosemary
- 150 g cherry tomato(es)
- 200 g mushrooms
- 100 g feta cheese
- 1 onion(s)
- 6 garlic clove(s)
- sea salt and pepper
- cumin
- paprika powder, rose hot
Instructions
- 1. Preheat your oven to 200 degrees Celsius using top and bottom heat.
- 2. Pour a generous amount of olive oil into a pan and heat it up.
- 3. Wash and peel the potatoes.
- 4. Cut the potatoes in half.
- 5. Fry the potato halves briefly in the hot pan.
- 6. Halve the bell peppers.
- 7. Remove the inside of the peppers.
- 8. Cut the peppers into small pieces.
- 9. Add the pepper pieces to the pan briefly.
- 10. Mix the vegetables in the pan with the herbs.
- 11. Place the mixture into an ovenproof dish.
- 12. Quarter the cherry tomatoes.
- 13. Halve the mushrooms.
- 14. Cut the feta cheese into cubes.
- 15. Slice the onion into rings.
- 16. Peel the garlic.
- 17. Add all prepared ingredients to the dish.
- 18. Stir everything well.
- 19. Season the vegetable mix with sea salt.
- 20. Add pepper.
- 21. Add cumin.
- 22. Sprinkle hot paprika powder over it.
- 23. Place the dish in the preheated oven.
- 24. Bake the vegetables on the middle rack for about 30 minutes.
- 25. Stir the vegetables occasionally.
- 26. Check if the potatoes are tender.
- 27. Remove the dish from the oven once the potatoes are cooked.
- 28. Serve the warm vegetables.
