  1. 1. Put flour, semolina, and salt into a large bowl and mix them well.
  2. 2. Dissolve the yeast in warm water and let the mixture rest for five minutes.
  3. 3. Add the yeast mixture to the flour mixture.
  4. 4. Knead the ingredients using the dough hook, in a food processor, or by hand for about ten minutes until the dough is elastic.
  5. 5. If the dough feels too firm, add a little more warm water.
  6. 6. If the dough is too runny, add a bit more flour.
  7. 7. Then knead the olive oil into the dough.
  8. 8. Wrap the dough in cling film or cover it with a kitchen towel.
  9. 9. Let the dough rise for at least thirty minutes.
  10. 10. Cut the Roma tomatoes in half crosswise.
  11. 11. Grate the tomatoes over a fine grater until only the skin remains.
  12. 12. Pour off the excess water through a fine sieve.
  13. 13. Season the remaining tomato mixture to taste with a little salt.
  14. 14. Brush a baking sheet generously with good, heat-resistant olive oil.
  15. 15. Preheat the oven to 250 degrees Celsius with top and bottom heat.
  16. 16. Knead the dough briefly by hand again.
  17. 17. Roll out the dough on a floured board to roughly the size of the baking sheet, working from the center outwards.
  18. 18. Make sure the dough is about three millimeters thick.
  19. 19. Place the rolled-out dough on the baking sheet.
  20. 20. Spread the tomato mixture on the dough very thinly.
  21. 21. Sprinkle oregano over it.
  22. 22. Cut the chorizo into small pieces.
  23. 23. Distribute the chorizo pieces on the pizza.
  24. 24. Tear the mozzarella into small pieces by hand.
  25. 25. Scatter the mozzarella pieces over the pizza.
  26. 26. Bake the pizza on the second rack from the bottom for about ten minutes.
  27. 27. If you have a pizza stone, you can skip baking on the sheet.
  28. 28. Instead, shape two round pizzas from the dough.
