🍕 Crispy thin pizza with chorizo and mozzarella

Ingredients
- 200 g wheat flour Type 550
- 50 g durum wheat semolina
- 0.25 cube yeast (approx. 10 g)
- 160 ml water, lukewarm
- 1 tsp salt
- 2 tbsp olive oil
- 4 Roma tomato(es)
- 1 tsp oregano (dried)

- 70 g chorizo (in a piece)
- 1 ball buffalo mozzarella
Instructions
- 1. Put flour, semolina, and salt into a large bowl and mix them well.
- 2. Dissolve the yeast in warm water and let the mixture rest for five minutes.
- 3. Add the yeast mixture to the flour mixture.
- 4. Knead the ingredients using the dough hook, in a food processor, or by hand for about ten minutes until the dough is elastic.
- 5. If the dough feels too firm, add a little more warm water.
- 6. If the dough is too runny, add a bit more flour.
- 7. Then knead the olive oil into the dough.
- 8. Wrap the dough in cling film or cover it with a kitchen towel.
- 9. Let the dough rise for at least thirty minutes.
- 10. Cut the Roma tomatoes in half crosswise.
- 11. Grate the tomatoes over a fine grater until only the skin remains.
- 12. Pour off the excess water through a fine sieve.
- 13. Season the remaining tomato mixture to taste with a little salt.
- 14. Brush a baking sheet generously with good, heat-resistant olive oil.
- 15. Preheat the oven to 250 degrees Celsius with top and bottom heat.
- 16. Knead the dough briefly by hand again.
- 17. Roll out the dough on a floured board to roughly the size of the baking sheet, working from the center outwards.
- 18. Make sure the dough is about three millimeters thick.
- 19. Place the rolled-out dough on the baking sheet.
- 20. Spread the tomato mixture on the dough very thinly.
- 21. Sprinkle oregano over it.
- 22. Cut the chorizo into small pieces.
- 23. Distribute the chorizo pieces on the pizza.
- 24. Tear the mozzarella into small pieces by hand.
- 25. Scatter the mozzarella pieces over the pizza.
- 26. Bake the pizza on the second rack from the bottom for about ten minutes.
- 27. If you have a pizza stone, you can skip baking on the sheet.
- 28. Instead, shape two round pizzas from the dough.
