🍰 Streusel Cake with Mandarins and Sour Cream

Ingredients
- 700 g flour
- 300 g sugar
- 250 g butter
- 2 egg(s)
- 4 tsp baking powder
- 2 packets vanilla sugar
- butter for the pan
- parchment paper
- 8 small can(s) mandarin(s) (drained)
- 8 cups sour cream (200 g each)
- 160 g sugar
- 2 packets vanilla pudding powder
Instructions
- 1. Mix all ingredients for the dough and crumbles into a smooth dough. Line a baking tray (with the higher fat pan) with baking paper and lightly grease the sides with butter.
- 2. Place half of the dough on the tray and press it down firmly. It is best to roll over it afterwards with a rolling pin or a glass to create an even layer.
- 3. Mix all ingredients for the filling (except the mandarins) with the mixer. Finally, add the mandarins and mix them in briefly (they will be crushed, which is intended). Spread the filling over the dough.
- 4. Crumble the remaining dough as crumbles on top.
- 5. Bake the cake at 175 °C fan-forced for 1 hour and let it cool in the pan.
- 6. It is best to bake the cake the day before and let it cool completely overnight in a cool place.
