🍽️ Baked Entrecôte with Goat Cheese, Pepper Sauce, Green Beans and Oven Potatoes

Ingredients
- 4 slice/s Entrecôte(s) (à 160 g)
- 200 g goat cheese log
- salt and pepper
- mustard
- oil for frying
- 2 tbsp pepper, green (pickled)
- 2 cl brandy
- 100 ml roasting stock (or jus)
- 100 ml cream
- 400 g beans, green
- 1 onion/s
- 2 tbsp bacon cubes
- 1 tbsp butter
- 1 sprig/s basil
- 400 g potato/s (small, well washed, pre-cooked)
- 1 sprig/s rosemary
- 1 clove/s garlic
- 1 tbsp olive oil
- salt and pepper
Instructions
- 1. Wash the potatoes and cut them into halves or quarters.
- 2. Strip the needles from the rosemary stems and crush the garlic cloves.
- 3. Place the potatoes, garlic, and oil in a baking dish.
- 4. Season the potatoes with salt and pepper and sprinkle the rosemary on top.
- 5. Bake the potatoes in the oven at 180 degrees Celsius fan-forced for about 20 minutes until golden yellow.
- 6. Switch to top heat for the last 5 minutes of baking time.
- 7. Trim the hard ends off the green beans.
- 8. Put the beans in boiling water briefly to blanch them (cook briefly).
- 9. Dice the onions into small cubes.
- 10. Sauté the onions and bacon in butter in a pan.
- 11. Add the pre-cooked beans to the pan and heat them through.
- 12. Season the bean mixture with salt, pepper, and the chopped thyme.
- 13. Sear the entrecôte steak in a pan with oil on both sides.
- 14. Season the meat with salt and pepper.
- 15. Rub the meat thinly with mustard.
- 16. Slice the goat cheese.
- 17. Place the cheese slices on the seared meat.
- 18. Place the meat in the oven and finish cooking it at 160 degrees Celsius fan-forced for approx. 8 minutes.
- 19. Use the grill function or top heat at the end to brown the cheese.
- 20. Remove the cooked meat from the pan and set it aside.
- 21. Add the green peppers to the hot pan and sauté them briefly.
- 22. Deglaze the pan with the brandy.
- 23. Add the meat stock and cream to the pan.
- 24. Bring the sauce to a boil.
- 25. Take the oven potatoes and beans out of the oven or from the stove.
- 26. Place the potatoes and beans on the plates.
- 27. Place the entrecôte steak on the beans.
- 28. Pour the pepper sauce over the meat and sides.
- 29. Enjoy your meal!
