  1. 1. Heat the lard in a large pot or casserole dish on the stove.
  2. 2. Remove the pot from the heat to let it cool slightly.
  3. 3. Add the sauerkraut, finely diced onions, and the dissolved vegetable broth to the pot.
  4. 4. Add the bacon cubes and the sugar.
  5. 5. Pour in some water and optionally some pineapple juice.
  6. 6. Stir all ingredients well.
  7. 7. Place the pot back on the stove.
  8. 8. Simmer the kraut over medium heat for about 30 minutes.
  9. 9. Stir the kraut occasionally while it simmers.
  10. 10. Place the pot in the preheated oven at 175 degrees Celsius with top and bottom heat.
  11. 11. Let the kraut cook in the oven for another 20 to 30 minutes.
  12. 12. Stir the kraut repeatedly during the cooking time.
  13. 13. Pour in more water if necessary to prevent the kraut from drying out.
  14. 14. Remove the kraut from the oven when it has taken on a nice brown color.
  15. 15. Season the finished sauerkraut to taste with pepper, salt, and a little sugar.
  16. 16. Serve the dish with jowl, pork knuckle, bratwurst, mashed potatoes, or liver sausage.
