Ingredients
- 350 g margarine
- 350 g Flour
- 350 g Sugar
- 1 packet Vanilla sugar
- 2 tsp, heaped Baking powder
- 6 Egg(s)
- 3 Lemon(s) (organic)
- 300 g Powdered sugar
Instructions
- 1. Preheat the oven to 175 to 195 degrees Celsius using top and bottom heat.
- 2. Finely grate the zest from three lemons.
- 3. Squeeze the juice from two of these lemons.
- 4. Beat eggs and sugar with a mixer until frothy.
- 5. Sift the flour into a separate bowl.
- 6. Add vanilla sugar and baking powder to the flour.
- 7. Add the lemon zest to the flour mixture.
- 8. Add the margarine to the batter.
- 9. Gradually mix all ingredients into the egg mixture.
- 10. Stir the batter well until it is smooth.
- 11. Line a baking sheet with baking paper.
- 12. Spread the batter evenly onto the baking sheet.
- 13. Place the sheet in the preheated oven.
- 14. Bake the cake for about 20 minutes on the middle rack.
- 15. Gradually mix lemon juice and powdered sugar to form a glaze.
- 16. Be very sparing with the lemon juice so that the glaze remains thick and creamy.
- 17. Poke the still warm cake all over with a fork.
- 18. Quickly spread the glaze over the warm cake.
- 19. Let the cake cool down completely.
