Ingredients
- 2 medium-sized carrot(s)
- 2 small onion(s)
- 200 g lentils, red
- 2 tbsp ghee (or clarified butter)
- 200 g yogurt
- lemon juice
- salt and pepper
- 1 liter vegetable broth
Instructions
- 1. Peel the carrots.
- 2. Dice the onions into very small cubes.
- 3. Heat the ghee (clarified butter) in a pot.
- 4. Sauté the vegetables until they are soft and translucent.
- 5. Add the red lentils.
- 6. Stir them briefly.
- 7. Pour in the vegetable broth.
- 8. Cover the pot.
- 9. Let the soup simmer on low heat for about 10 minutes.
- 10. Check if the lentils are soft.
- 11. Remove the pot from the heat.
- 12. Puree the lentils until creamy using a hand blender.
- 13. Stir in the yogurt.
- 14. Season the soup with salt to your taste.
- 15. Season the soup with pepper to your taste.
- 16. Add a squeeze of lemon juice.
