🍽️ Crispy Cheese Spätzle

Ingredients
- 500 g flour
- 1 tbsp oil
- 250 ml water
- 4 tsp salt
- 6 egg(s)
- 3 medium-sized onion(s)
- 300 g cheese, grated (Allgäu Emmental)
Instructions
- 1. Mix the eggs, flour, oil, and about 4 teaspoons of salt using the dough hook. Gradually add water until a thick, sticky dough forms. The exact amount depends on the size of the eggs.
- 2. Bring salted water to a boil in a large pot. Press the dough spoonful by spoonful through a spätzle press directly into the boiling water. If you do not have a press, scrape the dough from the cutting board directly into the water.
- 3. The spätzle will float to the surface after a short time. Remove them with a slotted spoon and place them in a large bowl.
- 4. Sprinkle each portion of spätzle with some cheese immediately and stir well to distribute the cheese evenly. Then cook the next batch of spätzle. Make sure the water is well-salted, as the spätzle will absorb salt from the water.
- 5. Stir occasionally at the bottom of the pot to prevent anything from burning or sticking.
- 6. Peel the onions and slice them into rings. Fry them in a pan until dark brown and crispy. Then distribute the fried onions over the cheese spätzle.
- 7. Serve the spätzle with a fresh green salad.
