🍽️ The real Bolognese

Ingredients
- 125 g Butter
- a little olive oil
- 2 large onion(s)
- 3 carrot(s)
- 3 stalk(s) celery
- 1 kg ground beef
- a splash white wine
- to taste milk (approx. 250 - 500 ml (depending on the sauce amount))
- 1.5 can(s) tomato(es) (400 g content each)
- 3 garlic clove(s) (sliced)
- 3 chili pepper(s) (mashed)
- sea salt and pepper (black)
- 600 g spaghetti
Instructions
- 1. Heat a large pan.
- 2. Add 125 grams of butter to the pan.
- 3. Add a splash of olive oil to prevent the butter from burning.
- 4. Peel the onions, carrots, and celery.
- 5. Finely chop the vegetables.
- 6. Stew the vegetables on very low heat.
- 7. Cook the vegetables for at least 30 minutes.
- 8. Wait until the vegetables are soft and translucent.
- 9. Ensure the vegetables only stew and do not fry.
- 10. Take a separate pan.
- 11. Fry the ground beef on high heat.
- 12. Cook the meat until it is dark brown.
- 13. Deglaze the meat with a splash of white wine.
- 14. Release the browned bits from the bottom of the pan.
- 15. Pour about 1/4 to 1/2 liter of milk into the pan.
- 16. Add the milk to give the meat a mild flavor.
- 17. Wait until the meat mixture boils.
- 18. Add the canned tomatoes.
- 19. Preferably use San Marzano tomatoes.
- 20. Wait until everything boils again.
- 21. Add the stewed vegetables from step 1.
- 22. Slice the garlic.
- 23. Add the garlic slices.
- 24. Crush the chili peppers.
- 25. Add the crushed chili peppers.
- 26. Season the sauce with sea salt.
- 27. Season the sauce with black pepper.
- 28. Let the sauce cool down.
- 29. Warm the sauce slowly about 1 hour before serving.
- 30. Serve the sauce directly or after warming.
- 31. Add fresh, finely chopped carrots if you want more crunch.
- 32. Add fresh, finely chopped celery if you want more crunch.
- 33. Cook the pasta according to package instructions.
- 34. Cook the pasta until al dente.
- 35. Drain the pasta.
- 36. Serve the spaghetti on plates.
- 37. Top the spaghetti with the Bolognese.
- 38. Enjoy the hot meal.
