🍽️ Hearty Pea Soup

Ingredients
- 150 g peas (dried)
- 0.5 Liter water (for soaking)
- 150 g bacon belly (smoked, in one piece)
- 100 g leek (cut into thin rings)
- 100 g carrot(s) ((roots), finely diced)
- 150 g potato(es) (diced small)
- 1 bay leaf
- 1 onion(s) (finely diced)
- 1 tbsp oil
- 50 g celeriac (peeled, in one piece)
- 250 ml meat broth
- 250 g pig's tails (3 pieces)
- pepper to taste
Instructions
- 1. Place the peas in a bowl and cover them with water.
- 2. Let the peas soak in the water overnight.
- 3. Do not drain the soaking water the next day.
- 4. Bring the peas and the soaking water to a boil in a pot.
- 5. Cook the peas for about 30 minutes.
- 6. Add the belly bacon to the pot.
- 7. Cook the soup for another 30 minutes.
- 8. Add some fresh water if the soup becomes too thick.
- 9. Cut the leek into small rings.
- 10. Peel the carrots and cut them into small cubes.
- 11. Peel the potatoes and cut them into small cubes.
- 12. Add the leek, carrots, and potatoes to the soup.
- 13. Add the bay leaf to the soup.
- 14. Cut the onions into small cubes.
- 15. Heat some oil in a small pan.
- 16. Fry the onion cubes in the hot oil.
- 17. Add the fried onions to the soup.
- 18. Add the piece of celery to the soup.
- 19. Pour the meat broth into the soup.
- 20. Cook the soup for another 30 minutes.
- 21. Remove the piece of celery from the soup.
- 22. Remove the bay leaf from the soup.
- 23. Remove the belly bacon from the soup.
- 24. Lightly mash the soup with a potato masher.
- 25. Alternatively, briefly use a hand blender.
- 26. Cut the removed belly bacon into small pieces.
- 27. Return the bacon pieces to the soup.
- 28. Add the pork tails to the soup.
- 29. Season the soup with pepper.
- 30. Do not usually salt the soup, as the bacon and pork tails are already salty.
- 31. Let the soup simmer for another 30 minutes on the lowest heat setting.
- 32. Stir the soup occasionally.
- 33. Serve the soup hot.
