  1. 1. Place the peas in a bowl and cover them with water.
  2. 2. Let the peas soak in the water overnight.
  3. 3. Do not drain the soaking water the next day.
  4. 4. Bring the peas and the soaking water to a boil in a pot.
  5. 5. Cook the peas for about 30 minutes.
  6. 6. Add the belly bacon to the pot.
  7. 7. Cook the soup for another 30 minutes.
  8. 8. Add some fresh water if the soup becomes too thick.
  9. 9. Cut the leek into small rings.
  10. 10. Peel the carrots and cut them into small cubes.
  11. 11. Peel the potatoes and cut them into small cubes.
  12. 12. Add the leek, carrots, and potatoes to the soup.
  13. 13. Add the bay leaf to the soup.
  14. 14. Cut the onions into small cubes.
  15. 15. Heat some oil in a small pan.
  16. 16. Fry the onion cubes in the hot oil.
  17. 17. Add the fried onions to the soup.
  18. 18. Add the piece of celery to the soup.
  19. 19. Pour the meat broth into the soup.
  20. 20. Cook the soup for another 30 minutes.
  21. 21. Remove the piece of celery from the soup.
  22. 22. Remove the bay leaf from the soup.
  23. 23. Remove the belly bacon from the soup.
  24. 24. Lightly mash the soup with a potato masher.
  25. 25. Alternatively, briefly use a hand blender.
  26. 26. Cut the removed belly bacon into small pieces.
  27. 27. Return the bacon pieces to the soup.
  28. 28. Add the pork tails to the soup.
  29. 29. Season the soup with pepper.
  30. 30. Do not usually salt the soup, as the bacon and pork tails are already salty.
  31. 31. Let the soup simmer for another 30 minutes on the lowest heat setting.
  32. 32. Stir the soup occasionally.
  33. 33. Serve the soup hot.
