Instructions

  1. 1. Finely chop the onions and garlic.
  2. 2. Place the chopped vegetables into a large pan.
  3. 3. Cut the meat into small, bite-sized cubes.
  4. 4. Add the meat cubes to the pan as well.
  5. 5. Season the meat generously with salt.
  6. 6. Mix everything together thoroughly.
  7. 7. Drizzle a few drops of lemon juice concentrate over the mixture.
  8. 8. Cover the pan.
  9. 9. Let the mixture sit for about 60 minutes.
  10. 10. Important: Do not heat or fry the meat at this stage.
  11. 11. The meat simply marinates with the spices.
  12. 12. After 60 minutes, pour a generous splash of sunflower oil into the pan.
  13. 13. Use sunflower oil and not olive oil.
  14. 14. Olive oil would overpower the dish's natural flavor.
  15. 15. Fry the goulash for about 10 minutes on high heat.
  16. 16. Reduce the heat to level 4.
  17. 17. Level 4 corresponds to about two-thirds of the stove's maximum power.
  18. 18. Continue frying the goulash for another 15 minutes.
  19. 19. Add 500 milliliters of water to the pan.
  20. 20. Add a pinch of caraway seeds.
  21. 21. Add a good teaspoon of bouillon powder.
  22. 22. Stir everything well.
  23. 23. Simmer the goulash uncovered for about 40 minutes.
  24. 24. Keep the heat constant during this process.
  25. 25. Simmer until the liquid has completely evaporated.
  26. 26. Stir the goulash occasionally during this process.
  27. 27. In a measuring jug, mix 500 milliliters of water with tomato paste.
  28. 28. Add a good teaspoon of sweet paprika powder.
  29. 29. Add a pinch of hot paprika powder.
  30. 30. Add marjoram.
  31. 31. Add salt.
  32. 32. Add pepper.
  33. 33. Add a little more caraway seeds.
  34. 34. Pour this seasoning mixture into the pan.
  35. 35. Now simmer the goulash on low heat.
  36. 36. Level 2 corresponds to about one-third of the stove's maximum power.
  37. 37. Simmer the goulash for another 30 minutes with the lid on.
  38. 38. Stir the goulash occasionally during this process.
  39. 39. Perfect side dishes include dumplings (Nockerln).
  40. 40. Small fresh spiral pasta is also a very good and visually similar alternative.
