🍽️ Hungarian Goulash – Pörkölt

Ingredients
- 2 onion(s)
- 5 garlic clove(s)
- 500 g pork goulash
- lemon juice concentrate (a few drops of it)
- to taste sunflower oil (a good splash)
- 1 liter water (divided into 2 x 500 ml)
- 1 pinch(es) cumin powder
- 1 tsp broth powder
- 100 g tomato paste
- 1 tsp paprika powder, sweet
- 1 pinch(es) paprika powder, hot
- 1 pinch(es) marjoram
- 1 pinch(es) salt
- 1 pinch(es) pepper
- 1 pinches cumin powder
Instructions
- 1. Finely chop the onions and garlic.
- 2. Place the chopped vegetables into a large pan.
- 3. Cut the meat into small, bite-sized cubes.
- 4. Add the meat cubes to the pan as well.
- 5. Season the meat generously with salt.
- 6. Mix everything together thoroughly.
- 7. Drizzle a few drops of lemon juice concentrate over the mixture.
- 8. Cover the pan.
- 9. Let the mixture sit for about 60 minutes.
- 10. Important: Do not heat or fry the meat at this stage.
- 11. The meat simply marinates with the spices.
- 12. After 60 minutes, pour a generous splash of sunflower oil into the pan.
- 13. Use sunflower oil and not olive oil.
- 14. Olive oil would overpower the dish's natural flavor.
- 15. Fry the goulash for about 10 minutes on high heat.
- 16. Reduce the heat to level 4.
- 17. Level 4 corresponds to about two-thirds of the stove's maximum power.
- 18. Continue frying the goulash for another 15 minutes.
- 19. Add 500 milliliters of water to the pan.
- 20. Add a pinch of caraway seeds.
- 21. Add a good teaspoon of bouillon powder.
- 22. Stir everything well.
- 23. Simmer the goulash uncovered for about 40 minutes.
- 24. Keep the heat constant during this process.
- 25. Simmer until the liquid has completely evaporated.
- 26. Stir the goulash occasionally during this process.
- 27. In a measuring jug, mix 500 milliliters of water with tomato paste.
- 28. Add a good teaspoon of sweet paprika powder.
- 29. Add a pinch of hot paprika powder.
- 30. Add marjoram.
- 31. Add salt.
- 32. Add pepper.
- 33. Add a little more caraway seeds.
- 34. Pour this seasoning mixture into the pan.
- 35. Now simmer the goulash on low heat.
- 36. Level 2 corresponds to about one-third of the stove's maximum power.
- 37. Simmer the goulash for another 30 minutes with the lid on.
- 38. Stir the goulash occasionally during this process.
- 39. Perfect side dishes include dumplings (Nockerln).
- 40. Small fresh spiral pasta is also a very good and visually similar alternative.
