  1. 1. Wash the salad thoroughly and remove any wilted leaves.
  2. 2. Mix fine onion cubes, balsamic vinegar, olive oil, and garlic into a dressing. Season to taste with salt, pepper, and other spices.
  3. 3. Peel the orange and reduce the juice until only one-third to one-quarter remains.
  4. 4. Quarter the mushrooms and fry them in butter with a little oil, seasoned with salt and pepper. Sprinkle a pinch of sugar over them, add two to three tablespoons of honey, and stir until the mushrooms caramelize slightly.
  5. 5. Toss the salad in the dressing and mix well. Pile the mushrooms onto the salad, drizzle with the reduced orange juice, and top with thin orange slices. Grate plenty of Parmesan over the top.
  6. 6. This salad pairs excellently with Italian dishes, but can also be served as a standalone main course with bacon and white bread.
