🍰 Lebkuchen Parfait with Spiced Oranges

Ingredients
- 250 ml cream
- 3 egg whites
- 3 egg yolks
- 30 g sugar
- 100 g chocolate coating
- 1 gingerbread (diced)
- 1 pinch(es) gingerbread spice
- 5 orange(s)
- 100 g sugar
- 100 ml white wine
- 10 g cornstarch
- cinnamon
- cloves
- mint (for decoration)
Instructions
- 1. Whip the cream until stiff. Whip the egg whites until stiff. Beat the egg yolks creamy with the sugar.
- 2. Chop the chocolate finely and melt it in a double boiler.
- 3. Stir the egg yolks quickly with the chocolate. Add the gingerbread cubes and the spices. Gently fold in the egg whites and the whipped cream. Line a mold with plastic wrap and fill it with the mixture. Freeze overnight in the freezer compartment.
- 4. Peel the oranges and cut out the segments. Place the segments on a sieve and catch the juice.
- 5. Caramelize the sugar in a pot. Deglaze with white wine and reduce slightly. Add orange juice and spices. Bring to a boil and thicken with the mixed starch. Add the orange segments and cool down.
