🍽️ Goat cheese in bacon wrap on colorful lentil salad

Ingredients
- 8 slice/s goat cream cheese (finger-thick)
- 8 slice/s bacon
- 1 tbsp honey
- 1 sprig rosemary
- 200 g lentils, red
- 2 stalk/s chives (or leek)
- 2 tomato/s
- 1 bunch arugula
- 1 tbsp olive paste (or whole olives)
- 8 tbsp olive oil
- 3 tbsp vinegar
- 1 tsp mustard
- sugar
- salt and pepper
- oil for frying
- balsamic cream (for decoration)
Instructions
- 1. Cook the lentils according to the package instructions for your specific variety. After cooking, drain the water and let the lentils cool down.
- 2. Slice the spring onion into rings. Clean the tomatoes and cut them into cubes. Wash the arugula, spin it dry, and set it aside.
- 3. Mix vinegar, mustard, salt, pepper, sugar, olive paste, and oil to make a vinaigrette. Add the vinaigrette to the lentils and mix in the vegetables.
- 4. Wrap each slice of cheese with a strip of bacon. Fry them briefly in a pan with oil and rosemary. Add honey and glaze the cheese. Season with pepper.
- 5. Serve the goat cheese on top of the lentil salad.
