Ingredients
- 500 g wheat flour Type 550 (strong baking flour)
- 10 g salt
- 10 g olive oil
- 7.5 g sugar
- 0.5 cube fresh yeast (or 1 packet dry yeast)
- 360 ml water
- oil (for the bowl)
- flour for the work surface
- 1 egg (mixed with a little water)
- sesame (or black cumin) to taste
Instructions
- 1. Process the dough ingredients into a very soft yeast dough and knead it for about 8 minutes. Place the dough in a bowl lightly greased with oil and let it rise for approx. 1.5 hours.
- 2. Turn the dough out onto a floured work surface and divide it into portions of approx. 400 g each (simply take half for this amount). Gently shape the dough pieces into an oval form without squeezing out the air bubbles. Cover them and let them rest for 20 minutes.
- 3. Now shape each dough piece as desired, either long or oval, and place it on a baking sheet lined with baking paper. The dough pieces may take up almost the entire width of the tray.
- 4. Brush the loaves with a mixture of water and egg. Now press deeply into the dough with your fingertips until almost small holes form, and sprinkle with sesame or black cumin if desired. Let the breads rest for another 20 minutes.
- 5. Place the breads in the oven preheated to 250 °C top and bottom heat and bake for approx. 7 to 9 minutes.
- 6. Be careful not to bake them for too long, otherwise they will lose their characteristic soft crumb!
