🍽️ Crispy White Cabbage Salad Greek Style

Ingredients
- 1 white cabbage
- 2 onion(s)
- 1 cup sugar (small cup)
- 1 cup oil (small cup)
- 2 tbsp salt
- 1 tsp pepper
- 0.5 bottle herb vinegar (e.g. from Kühne), approx. 250 ml - 350 ml
- 1 bottle mineral water (with carbonation, approx. 0,7 liter - 1 liter)
Instructions
- 1. Remove the hard core from the white cabbage.
- 2. Grate the white cabbage finely.
- 3. Place the grated cabbage in a large bowl.
- 4. Dice the onions into small cubes.
- 5. Mix the onion cubes into the grated cabbage.
- 6. Put sugar, oil, salt, pepper, herb vinegar, and mineral water into a separate bowl.
- 7. Stir the liquid until the sugar has completely dissolved.
- 8. Pour the marinade carefully over the cabbage.
- 9. Cover the bowl with a smaller plate.
- 10. Weigh down the plate with two or three heavy cans.
- 11. Let the salad marinate for 24 hours.
- 12. Drain the marinade the next day.
- 13. Serve the salad.
- 14. Store the salad in jars in the refrigerator if needed.
