🍰 Mandarin Sour Cream Cake

Ingredients
- 125 g flour
- 65 g sugar
- 65 g margarine (or butter)
- 1 egg
- 1 tsp baking powder
- 500 ml milk
- 2 packets vanilla pudding powder
- 200 g sugar
- 3 containers sour cream (each approx. 200 g)
- 2 cans mandarin oranges (each approx. 300 - 350 g net weight)
- 1 packet clear glaze mix
Instructions
- 1. Prepare a 26-centimeter springform pan.
- 2. Cook the pudding according to package instructions using milk, pudding powder, and sugar. Set it aside to cool and place plastic wrap directly on the surface to prevent a skin from forming.
- 3. Drain the mandarins and collect the juice.
- 4. Knead the crust ingredients into a dough. Press the dough into the greased pan, forming a raised edge.
- 5. Stir the sour cream into the cooled pudding and spread the mixture over the crust. Arrange the mandarins on top.
- 6. Bake the cake at 175 degrees Celsius with top and bottom heat for about 80 minutes.
- 7. Once the cake has cooled, prepare a glaze by mixing the collected mandarin juice and glaze powder according to package instructions, then coat the cake with it.
