  1. 1. Peel the onions and slice them into thin rings.
  2. 2. Wash the meat and pat it dry with a kitchen towel.
  3. 3. Cut the meat into cubes of about 2 centimeters.
  4. 4. Cut the bacon into small cubes.
  5. 5. Slowly melt the bacon fat in a pot.
  6. 6. Add the onion rings to the hot fat.
  7. 7. Cook the onions until soft for about 5 minutes.
  8. 8. Stir the paprika powder into the onions.
  9. 9. Stir in the tomato paste.
  10. 10. Add the meat cubes to the pot.
  11. 11. Season everything with salt and pepper.
  12. 12. Distribute the sauerkraut evenly over the meat.
  13. 13. Pour broth over everything.
  14. 14. Let the goulash simmer gently for about 1.5 hours.
  15. 15. Stir in the crème fraîche.
  16. 16. Mix the cornstarch with 2 tablespoons of water until smooth.
  17. 17. Add the starch-water mixture to the goulash to thicken it.
  18. 18. Taste the dish again with salt and pepper.
  19. 19. Serve the goulash hot.
