🍽️ Szegediner Goulash

Ingredients
- 250 g onion(s)
- 300 g pork
- 300 g beef
- 100 g bacon (streaky)
- 500 g sauerkraut
- 500 ml meat broth
- 1 tbsp tomato paste
- 1 container crème fraîche
- 2 tsp cornstarch
- 1 tsp paprika powder (hot)
- salt and pepper
- 2 tbsp water
Instructions
- 1. Peel the onions and slice them into thin rings.
- 2. Wash the meat and pat it dry with a kitchen towel.
- 3. Cut the meat into cubes of about 2 centimeters.
- 4. Cut the bacon into small cubes.
- 5. Slowly melt the bacon fat in a pot.
- 6. Add the onion rings to the hot fat.
- 7. Cook the onions until soft for about 5 minutes.
- 8. Stir the paprika powder into the onions.
- 9. Stir in the tomato paste.
- 10. Add the meat cubes to the pot.
- 11. Season everything with salt and pepper.
- 12. Distribute the sauerkraut evenly over the meat.
- 13. Pour broth over everything.
- 14. Let the goulash simmer gently for about 1.5 hours.
- 15. Stir in the crème fraîche.
- 16. Mix the cornstarch with 2 tablespoons of water until smooth.
- 17. Add the starch-water mixture to the goulash to thicken it.
- 18. Taste the dish again with salt and pepper.
- 19. Serve the goulash hot.
