🍽️ Juicy Beef Steaks in Spicy Pepper Cognac Cream Sauce

Ingredients
- 4 Steak(s) (from beef tenderloin (à 200g))
- 4 Allspice berries
- 1 tbsp Pepper (whole, black)
- 1 tbsp Pepper (whole, white)
- 1 tbsp Pepper (whole, green)
- 2 tbsp Oil
- 4 tbsp Cognac
- 20 g butter
- 250 ml Cream
- Salt
Instructions
- 1. Coarsely crush the peppercorns and allspice berries.
- 2. Turn the steaks in the mixture to coat them well.
- 3. Press the spices firmly onto the meat.
- 4. Fry the steaks in oil at the highest heat for one minute on each side.
- 5. Reduce the heat.
- 6. Fry for another two to four minutes per side.
- 7. Remove the steaks from the pan.
- 8. Wrap them in aluminum foil.
- 9. Set them aside.
- 10. Pour off the cooking fat from the pan.
- 11. Deglaze the pan drippings with cognac.
- 12. Add the butter.
- 13. Stir in the cream.
- 14. Simmer the sauce until it reaches your desired consistency.
- 15. Season with salt.
- 16. Plate the steaks.
- 17. Collect the meat juices from the aluminum foil.
- 18. Stir the juices into the sauce.
- 19. Pour the finished sauce over the steaks.
