Ingredients
- 6 Eggs
- 200 g Sugar
- 100 g Flour
- 100 g Cornstarch
- 25 g Cocoa Powder (for the dark version)
- 25 g Vanilla Pudding Powder (for the light version)
- 1 tsp Baking Powder
Instructions
- 1. Separate the eggs. Keep the egg whites and egg yolks in separate bowls.
- 2. Beat the egg whites with a mixer until stiff peaks form.
- 3. Add the sugar slowly to the egg whites. Continue beating until the mixture is glossy and firm.
- 4. Gently fold the egg yolks into the whipped egg whites.
- 5. Mix the flour with the cornstarch, baking powder, and either cocoa (for dark batter) or vanilla pudding powder (for light batter).
- 6. Sift the dry mixture over the egg mixture.
- 7. Fold the dry ingredients in very carefully until the batter is homogeneous.
- 8. Line a 26 cm springform pan with baking paper.
- 9. Pour the batter into the prepared pan. Smooth the surface with a spatula.
- 10. Preheat the oven. Bake the cake for about 30 minutes.
- 11. Set the temperature: 200 degrees Celsius for electric ovens, 175 degrees Celsius for convection (fan-assisted), or gas mark 3 for gas ovens.
