  1. 1. Separate the eggs. Keep the egg whites and egg yolks in separate bowls.
  2. 2. Beat the egg whites with a mixer until stiff peaks form.
  3. 3. Add the sugar slowly to the egg whites. Continue beating until the mixture is glossy and firm.
  4. 4. Gently fold the egg yolks into the whipped egg whites.
  5. 5. Mix the flour with the cornstarch, baking powder, and either cocoa (for dark batter) or vanilla pudding powder (for light batter).
  6. 6. Sift the dry mixture over the egg mixture.
  7. 7. Fold the dry ingredients in very carefully until the batter is homogeneous.
  8. 8. Line a 26 cm springform pan with baking paper.
  9. 9. Pour the batter into the prepared pan. Smooth the surface with a spatula.
  10. 10. Preheat the oven. Bake the cake for about 30 minutes.
  11. 11. Set the temperature: 200 degrees Celsius for electric ovens, 175 degrees Celsius for convection (fan-assisted), or gas mark 3 for gas ovens.
