Ingredients
- 1 kg Savoy cabbage (cleaned, finely chopped)
- 1 onion(s) (chopped)
- 1 piece of bacon (fatty, approx. 100 g)
- 250 ml meat broth
- 75 ml milk
- 1 tbsp flour
- 1 tsp butter
- 100 ml cream
- salt and pepper
- nutmeg
- baking soda
Instructions
- 1. Heat butter in a pot over medium heat.
- 2. Add finely diced onions and diced bacon.
- 3. Fry the ingredients until they are golden brown.
- 4. Add chopped savoy cabbage (a type of cabbage with crinkly leaves) to the pot.
- 5. Pour hot meat broth over everything.
- 6. Steam the cabbage until tender over moderate heat.
- 7. Stir a pinch of baking soda into the cabbage to make it easier to digest.
- 8. Whisk flour and milk smoothly in a separate bowl.
- 9. Add the milk-flour mixture to the cooked cabbage.
- 10. Let the mixture come to a brief boil.
- 11. Season the dish with pepper, salt, and grated nutmeg.
- 12. Remove the pot from the heat when the mixture is no longer boiling.
- 13. Stir cream into the finished vegetable mixture.
- 14. Serve the cabbage with boiled potatoes and thick bratwurst or other briefly fried meat.
