  1. 1. Roast the almonds in a pan without oil until fragrant. Grate the lemon zest and mix it with the rest of the dough. Knead the roasted almonds thoroughly into the mixture.
  2. 2. Line two baking sheets with baking paper. Using hands lightly dusted with flour, shape four long, flat dough strips (about 5 cm wide) on the paper.
  3. 3. Bake the sheets at 175 degrees Celsius for 25 minutes.
  4. 4. Remove the dough strips from the baking sheet and cut them into diagonal slices using a sharp knife.
  5. 5. Place the slices flat back onto the baking sheet and bake them for another 10 minutes.
  6. 6. They taste fantastic with cappuccino or tea!
