  1. 1. Wash all strawberries thoroughly and remove the green stems. Puree 100 grams of the berries with one tablespoon of sugar and set the mixture aside to cool.
  2. 2. Mix Mascarpone, quark cheese, two tablespoons of sugar, lemon juice, and vanilla sugar until smooth, then adjust the seasoning. Chop 300 grams of strawberries into small pieces and gently fold them into the Mascarpone cream.
  3. 3. Line a dish with ladyfinger biscuits and drizzle them with orange juice. Layer the strawberry puree mixture and the Mascarpone cream alternately over the biscuits, then place the dessert in the refrigerator to chill.
  4. 4. Garnish the finished dessert with the remaining fresh strawberries and optionally a few leaves of mint or lemon balm before serving.
