  1. 1. Finely grate the zest from three limes.
  2. 2. Juice five to six limes.
  3. 3. Make sure you have about 100 milliliters of lime juice.
  4. 4. Mix the lime juice with 300 milliliters of mineral water.
  5. 5. Add the grated lime zest to the liquid.
  6. 6. Pour the mixture into an ice cube tray.
  7. 7. Place the tray in the freezer overnight.
  8. 8. Cut a honeydew melon in half.
  9. 9. Use a melon baller to scoop out balls from the flesh.
  10. 10. Cut six limes into eight wedges.
  11. 11. Mix the lime wedges with brown sugar.
  12. 12. Gently mash the mixture with a muddler or spoon.
  13. 13. Squeeze the juice out of the limes while doing this.
  14. 14. Add the melon balls to the lime mixture.
  15. 15. Add some sugarcane rum.
  16. 16. Place the bowl in the refrigerator for three hours.
  17. 17. Let the flavors meld.
  18. 18. Just before serving, add the remaining mineral water to the bowl.
  19. 19. Add the sparkling wine to the bowl.
  20. 20. Add the prepared lime ice cubes to the bowl.
  21. 21. Stir everything gently.
  22. 22. Serve the bowl fresh.
