  2. 2. Shake the arugula dry.
  3. 3. Place the arugula leaves on your plates.
  4. 4. Make a small cross-cut at the stem end of the figs.
  5. 5. Gently squeeze the figs from the bottom.
  6. 6. Open the figs to reveal the inside.
  7. 7. Place the figs in the center of the salad.
  8. 8. Tear the ham into small pieces by hand.
  9. 9. Tear the mozzarella into small pieces by hand.
  10. 10. Scatter the ham and mozzarella pieces over the salad.
  11. 11. Sprinkle a few fresh mint leaves over the salad.
  12. 12. Shave off paper-thin slices of Parmesan with a knife.
  13. 13. Sprinkle the Parmesan shavings over the salad.
  14. 14. Mix the olive oil, honey, and lemon juice in a small bowl.
  15. 15. Season the dressing mixture with a little salt.
  16. 16. Season the dressing mixture with freshly ground pepper.
  17. 17. Drizzle the dressing evenly over the salad.
  18. 18. Warm the honey in a water bath.
  19. 19. Carefully drizzle the warm honey over the finished salad in small drops using a spoon.
