Ingredients
- 10 elderflower umbels
- 1 kg sugar
- 15 g citric acid (up to 25 g)
- 1 liter water
Instructions
- 1. This recipe is a base version. If you need more syrup, simply double or triple the listed amounts. This base quantity yields about 1.5 liters of finished syrup.
- 2. Harvest the elderflower blossoms when they are fully ripe. The flower clusters should smell strongly and be completely open.
- 3. Pour 10 to 15 flower clusters into one liter of water each and let the mixture steep for 24 hours.
- 4. Strain the liquid through a fine sieve. Add 1 kilogram of sugar and 15 to 25 grams of citric acid per liter of measured water, then bring everything to a boil together. Boiling helps dissolve the sugar better and ensures the syrup stays fresh longer.
- 5. Pour the hot syrup immediately into well-rinsed bottles. Tip: You can replace the citric acid with the juice of 1 to 2 fresh lemons per liter of base. However, using citric acid gives the syrup a slightly more zesty taste.
