🍽️ The Classic Lentil Stew

Ingredients
- 250 g brown split lentils
- 300 g smoked belly pork (streaky, whole)
- 1 small onion (diced)
- 1 bunch soup vegetables (diced)
- 1 carrot (diced)
- 400 g potatoes (diced)
- salt and pepper
- 2 bay leaves
- some thyme
- some marjoram
- 2 pairs Frankfurter sausages (or Vienna sausages)
- some vinegar
Instructions
- 1. Rinse the flat lentils under running water.
- 2. Place the drained lentils in a bowl.
- 3. Pour 1.5 liters of cold water over the lentils.
- 4. Let the lentils soak in the water overnight.
- 5. Place the soaked lentils into a large pot.
- 6. Add the pork belly to the pot.
- 7. Add your spices to the pot.
- 8. Strain the water used for soaking the lentils through a sieve.
- 9. Pour 3/4 liter of the strained soaking water into the pot.
- 10. Bring the mixture in a pot to a boil.
- 11. Reduce the heat to a low setting.
- 12. Let the stew simmer gently for about 40 minutes.
- 13. Add the remaining vegetables (except the potatoes) to the pot.
- 14. Cook the stew for another 20 minutes.
- 15. Add the diced potatoes to the pot.
- 16. Cook the stew for another 20 minutes.
- 17. Slice the sausages about 10 minutes before the end of the cooking time.
- 18. Add the sausage slices to the pot.
- 19. Season the finished stew with salt to taste.
- 20. Season the stew with pepper to taste.
- 21. Season the stew with vinegar to taste.
- 22. Place a bottle of vinegar on the table.
- 23. Allow each guest to add acidity to their own bowl as they like.
