Ingredients
- 250 g bulgur (cracked wheat)
- 3 red bell peppers
- 1 medium red onion(s)
- 0.5 bunch scallion(s)
- 1 bunch flat-leaf parsley
- 4 tbsp oil, neutral (e. g. sunflower oil)
- 0.5 tube tomato paste
- salt
Instructions
- 1. Place the bulgur in a large bowl.
- 2. Cover the bulgur with hot water just enough to submerge it.
- 3. Drain any excess water immediately.
- 4. Season the bulgur generously with salt.
- 5. Let the bulgur swell for about 10 minutes.
- 6. Finely dice the bell pepper and onions.
- 7. Slice the spring onions into thin rings.
- 8. Chop the parsley finely.
- 9. Stir the oil and tomato paste into the bulgur.
- 10. Taste and adjust the seasoning with more salt if needed.
- 11. Gently fold in the chopped vegetables and parsley.
