Ingredients
- 2 Egg(s)
- 1 Garlic clove(s)
- 1 tbsp Parsley (chopped)
- 1 Tomato(s)
- 50 g Cooked ham
- 1 Ball/s Mozzarella (small ball)
- 2 tbsp Tomatoes, peeled
- 50 g Cream
- 1 Pinch(es) Oregano
- Butter (and fat for frying)
- parmesan
- Salt and pepper
- Nutmeg
Instructions
- 1. Finely chop the peeled tomatoes and sauté them briefly in butter with a pinch of sugar. Stir in the cream and season with salt, pepper, oregano, and optional chili powder. Let the sauce simmer for 10 to 15 minutes.
- 2. Whisk the eggs with pressed garlic, parsley, salt, pepper, and nutmeg.
- 3. Melt fat in the pan and add the egg mixture, covering the bottom. Spread the mixture evenly over medium heat using the back of a spoon. Occasionally pull through the batter with the spoon so liquid egg reaches the bottom. Fry only the underside.
- 4. Finely chop the tomato, ham, and mozzarella and distribute them over half of the omelet. Carefully fold the other half over it so it resembles a half-moon.
- 5. Preheat the oven to approx. 180 °C, preferably with top heat. Add some tomato sauce and plenty of Parmesan to the omelet and place the pan in the oven. Bake until the Parmesan has melted.
- 6. Spread the remaining tomato sauce on a plate, place the omelet on top, and serve warm, sprinkled with parsley and Parmesan.
