🍽️ Fluffy Japanese Milk Bread from the Air Fryer

Ingredients
- 20 g wheat flour Type 405
- 100 ml milk
- 14 g yeast
- 90 ml milk, lukewarm
- 330 g wheat flour Type 405
- 1 tbsp sugar
- 1 tsp salt
- 50 g butter, soft
- fats for the pan
Instructions
- 1. Whisk flour and milk together in a small saucepan.
- 2. Heat the mixture while stirring constantly over medium heat.
- 3. Cook the mixture until it becomes thick and glossy like pudding.
- 4. Remove the saucepan from the heat immediately.
- 5. Transfer the mixture into a bowl.
- 6. Let the mixture cool down for about 10 minutes until it is only lukewarm.
- 7. Dissolve the yeast in the lukewarm milk.
- 8. Add flour, sugar, salt, soft butter, and the cooled flour pudding to the milk-yeast mixture.
- 9. Knead the ingredients vigorously for at least 8 to 10 minutes.
- 10. Knead either with a machine or by hand.
- 11. Check the dough after 5 minutes to see if it is pulling away from the bowl's edge.
- 12. Only add more flour if the dough is still very sticky.
- 13. The finished dough should be smooth, elastic, and shiny.
- 14. Cover the dough.
- 15. Let the dough rise in a warm place for about 45 to 60 minutes.
- 16. The dough is ready when it has clearly doubled in volume.
- 17. Press the dough flat to remove large air bubbles.
- 18. Divide the dough into 3 equal pieces.
- 19. Roll each piece into an elongated shape.
- 20. Roll the dough pieces tightly like small carpets.
- 21. Grease a baking pan suitable for the air fryer (approx. 1.2 liters).
- 22. Place the 3 dough rolls side by side in the pan.
- 23. Cover the pan.
- 24. Let the dough rise again for about 45 minutes.
- 25. The dough is ready when it has almost reached the rim of the pan.
- 26. Preheat the air fryer briefly.
- 27. Bake the bread in two phases.
- 28. Bake the start phase for 10 minutes at 140 °C.
- 29. Increase the temperature to 160 °C.
- 30. Bake the finish phase for another 10 to 15 minutes.
- 31. Remove the bread from the pan if the bottom is still too soft.
- 32. Place the bread upside down directly into the air fryer basket.
- 33. Bake the bread for another 3 to 5 minutes at 150 °C.
- 34. Place the bread on a cake rack.
- 35. Let the bread cool completely for at least 2 to 3 hours.
- 36. Only cut the bread after it has cooled down.
