  1. 1. Whisk flour and milk together in a small saucepan.
  2. 2. Heat the mixture while stirring constantly over medium heat.
  3. 3. Cook the mixture until it becomes thick and glossy like pudding.
  4. 4. Remove the saucepan from the heat immediately.
  5. 5. Transfer the mixture into a bowl.
  6. 6. Let the mixture cool down for about 10 minutes until it is only lukewarm.
  7. 7. Dissolve the yeast in the lukewarm milk.
  8. 8. Add flour, sugar, salt, soft butter, and the cooled flour pudding to the milk-yeast mixture.
  9. 9. Knead the ingredients vigorously for at least 8 to 10 minutes.
  10. 10. Knead either with a machine or by hand.
  11. 11. Check the dough after 5 minutes to see if it is pulling away from the bowl's edge.
  12. 12. Only add more flour if the dough is still very sticky.
  13. 13. The finished dough should be smooth, elastic, and shiny.
  14. 14. Cover the dough.
  15. 15. Let the dough rise in a warm place for about 45 to 60 minutes.
  16. 16. The dough is ready when it has clearly doubled in volume.
  17. 17. Press the dough flat to remove large air bubbles.
  18. 18. Divide the dough into 3 equal pieces.
  19. 19. Roll each piece into an elongated shape.
  20. 20. Roll the dough pieces tightly like small carpets.
  21. 21. Grease a baking pan suitable for the air fryer (approx. 1.2 liters).
  22. 22. Place the 3 dough rolls side by side in the pan.
  23. 23. Cover the pan.
  24. 24. Let the dough rise again for about 45 minutes.
  25. 25. The dough is ready when it has almost reached the rim of the pan.
  26. 26. Preheat the air fryer briefly.
  27. 27. Bake the bread in two phases.
  28. 28. Bake the start phase for 10 minutes at 140 °C.
  29. 29. Increase the temperature to 160 °C.
  30. 30. Bake the finish phase for another 10 to 15 minutes.
  31. 31. Remove the bread from the pan if the bottom is still too soft.
  32. 32. Place the bread upside down directly into the air fryer basket.
  33. 33. Bake the bread for another 3 to 5 minutes at 150 °C.
  34. 34. Place the bread on a cake rack.
  35. 35. Let the bread cool completely for at least 2 to 3 hours.
  36. 36. Only cut the bread after it has cooled down.
