🍽️ Crunchy Whole Wheat Cheese Crackers from the Air Fryer

Ingredients
- 100 g whole wheat flour
- 65 g cheese, grated (e.g. Gouda, Alpine cheese or Parmesan)
- 1 pinch(es) salt
- 40 g butter flakes (cold)
- 40 ml water (ice cold)
Instructions
- 1. Put the whole wheat flour, grated cheese, and pinch of salt into a bowl.
- 2. Add the cold butter flakes.
- 3. Quickly mix the ingredients by hand or with a dough hook until you have a crumbly mixture.
- 4. Add the ice-cold water gradually, starting with one tablespoon.
- 5. Knead everything quickly into a smooth dough ball.
- 6. Do not knead the dough too long so the butter doesn't soften and the crackers stay crumbly.
- 7. Take off dough portions of about 15 grams each.
- 8. Roll the portions into even balls between your palms.
- 9. Flatten the balls with the heel of your hand.
- 10. Alternatively, roll the balls thin between two layers of baking paper using a rolling pin.
- 11. The thinner the crackers, the crunchier they will become.
- 12. Preheat the air fryer to 170 °C.
- 13. Place the crackers in the basket without overlapping them.
- 14. Bake the crackers for 8 to 10 minutes until they are golden brown and firm.
- 15. Carefully remove the crackers.
- 16. Let the crackers cool down, as they only become truly crunchy after cooling.
- 17. The recipe yields about 15 cheese crackers.
- 18. Mix in paprika powder, cumin, or dried herbs like rosemary into the dough for extra flavor if desired.
- 19. Store the finished crackers in a metal tin to keep them fresh and crunchy for several days.
