  1. 1. Take the tofu out of the packaging and let the liquid drain off.
  2. 2. Place the tofu on kitchen paper and pat it dry.
  3. 3. Change the kitchen paper several times and gently press the tofu with your hand to remove as much moisture as possible.
  4. 4. Make sure the tofu does not crumble, but press it firmly enough.
  5. 5. If you use firm tofu, you can alternatively press it for 15 minutes with a heavy pot.
  6. 6. Add soy sauce, sesame oil, freshly grated ginger, and the spices for the marinade to a bowl.
  7. 7. Gently mix the marinade ingredients together.
  8. 8. Cut the tofu into even cubes of about 2x2 cm.
  9. 9. Add the tofu cubes to the marinade and let the mixture sit for a short time so the tofu can absorb the flavors.
  10. 10. Sprinkle the starch evenly over the tofu cubes.
  11. 11. Gently fold in the starch so that all cubes are lightly dusted.
  12. 12. Lightly spray the basket of the air fryer with oil.
  13. 13. Distribute the tofu cubes loosely in the basket so that they do not overlap.
  14. 14. Lightly spray the tofu cubes with oil as well.
  15. 15. Preheat the air fryer to 200 °C and cook the cubes for about 12 to 14 minutes until crispy.
  16. 16. Turn the tofu cubes once after half the cooking time so that they brown evenly all around.
  17. 17. Keep an eye on the tofu from about minute 10, as the cooking time may vary depending on the device.
  18. 18. Remove the tofu when it is nicely golden brown on the outside.
