🍽️ Crispy Zucchini Rolls from the Air Fryer

Ingredients
- 2 large zucchini
- 175 g cream cheese
- 1 tbsp tomato paste
- 100 g cooked ham (in long slices)
- 50 g mozzarella (grated)
- 1 clove garlic
- salt and pepper
- 1 tsp herbs, Italian
- oil spray
Instructions
- 1. Wash the zucchini and slice it lengthwise into paper-thin slices. Use a mandoline or a bread slicing machine for best results, or a sharp kitchen knife. The thinner the slices, the easier it will be to roll them later.
- 2. Peel the garlic and chop it very finely.
- 3. Cut each slice of ham lengthwise into two narrow strips.
- 4. In a bowl, mix the cream cheese with the tomato paste, the chopped garlic, and your spices.
- 5. Spread a thin layer of the cream cheese mixture onto each zucchini slice.
- 6. Place the halved ham strips onto the cream cheese-coated zucchini slices.
- 7. Sprinkle some grated cheese over the ham.
- 8. Roll up the zucchini slices tightly and press them slightly so they hold their shape.
- 9. Moisten the tip of a wooden toothpick with water and insert it through the roll to secure it. The water prevents the toothpick from burning in the hot appliance.
- 10. Place the zucchini rolls into the air fryer basket. Make sure they are not too close together so that the hot air can circulate well.
- 11. Sprinkle additional mozzarella cheese over the rolls.
- 12. Lightly spray the rolls with cooking spray or oil.
- 13. Preheat the air fryer to 190 °C and cook the rolls for 10 to 12 minutes, until they are soft and lightly browned.
- 14. Check the progress briefly after half the time (about 5-6 minutes), as the exact time may vary depending on the appliance.
