🥗 Crispy Knöpfle Salad with Green Asparagus and Bacon

Ingredients
- 1 packet HENGLEIN Fresh Knöpfle
- 500 g asparagus, green
- 300 g cherry tomatoes
- 80 g bacon
- to taste baby lettuce leaves
- spring onions (approx. 2 - 3)
- 50 g butter
- 1 organic lemon
- 3 tbsp olive oil
- 1 tsp mustard, sweet
- 1 tsp honey
- salt and pepper
- apple cider vinegar (approx. 2 - 3 tbsp)
- 2 tsp teriyaki sauce
Instructions
- 1. Put oil, mustard, apple cider vinegar, teriyaki sauce, honey, salt, and pepper into a small bowl.
- 2. Stir the ingredients vigorously until the dressing is well combined.
- 3. Wash the spring onions thoroughly.
- 4. Slice the spring onions into thin rings.
- 5. Set the spring onion rings aside.
- 6. Wash the green asparagus.
- 7. Trim off the woody bottom ends of the asparagus stalks.
- 8. Cut the asparagus into pieces about two centimeters long.
- 9. Melt butter in a pan.
- 10. Fry the asparagus pieces in the melted butter.
- 11. Season the asparagus with a little lemon juice, salt, and pepper.
- 12. Transfer the asparagus to a separate bowl.
- 13. Melt a little more butter in the same pan.
- 14. Fry the Knöpfle (small dumplings) in it until golden brown.
- 15. Add the bacon to the same pan.
- 16. Render the bacon over medium heat until it is crispy.
- 17. Wash the tomatoes.
- 18. Cut the tomatoes in half.
- 19. Wash the salad greens.
- 20. Put the salad greens into a large salad bowl.
- 21. Add the fried Knöpfle.
- 22. Add the green asparagus.
- 23. Add the halved tomatoes.
- 24. Add the crispy bacon.
- 25. Pour the prepared dressing over the salad.
- 26. Toss all ingredients well together.
- 27. Grate some lemon zest over the finished salad.
- 28. Serve the salad immediately.
- 29. Enjoy your salad.
