  1. 1. Wash the vegetables and the meat under running water and then pat them dry with a kitchen towel. Grate the carrot finely and cut the bell pepper and the spring onions into long strips or small rings.
  2. 2. Slice the chicken meat into thin pieces. Fry it in a pan with one tablespoon of vegetable oil and the bell pepper for about 3 to 4 minutes over high heat.
  3. 3. Meanwhile, cook the Mie noodles for about 5 minutes until al dente (still slightly firm to the bite) and then drain them well in a sieve.
  4. 4. Add the noodles and all remaining ingredients to the pan and continue to fry everything for about 5 minutes over medium heat. Season the mixture to taste with salt, pepper, and if necessary, more soy sauce.
  5. 5. Garnish the dish as desired with chopped peanuts and fresh spring onions.
