  1. 1. Heat a pan over medium heat and sear the minced meat until browned.
  2. 2. Add the chopped garlic to the pan and sauté briefly until fragrant.
  3. 3. Soak the glass noodles in a bowl of warm water until they become soft.
  4. 4. Chop the vegetables finely or grate them.
  5. 5. Add the prepared vegetables and remaining ingredients to the pan one by one.
  6. 6. Sauté the entire mixture briefly until everything is well combined and heated through.
  7. 7. Remove the pan from the heat and transfer the filling mixture into a separate bowl.
  8. 8. Season the filling with one teaspoon of soy sauce and mix everything thoroughly.
  9. 9. Dip a rice paper sheet briefly into water until it is pliable and easy to shape.
  10. 10. Place one tablespoon of the filling on the lower half of the rice paper.
  11. 11. Fold the bottom edge over the filling, tuck in the sides, and roll the spring roll tightly.
  12. 12. Place the finished rolls into the basket of the air fryer.
  13. 13. Preheat the air fryer to 180 °C and bake the rolls for 15 to 18 minutes until golden brown and crispy.
  14. 14. Remove the summer rolls from the fryer and serve them warm as a snack or light dinner.
