🍽️ Lime Tart from the Air Fryer

Ingredients
- 120 g wheat flour Type 405
- 40 g sugar
- 5 g baking powder
- 4 g vanilla sugar
- 1 pinch(es) salt
- 75 g butter
- 1 can condensed milk, sweetened (290 ml)
- 3 egg yolks
- 80 ml lime juice
- 1 organic lime(s) (zested peel)

- legumes (dried, for blind baking)
Instructions
- 1. Calculate all ingredient quantities for a 20-centimeter springform pan.
- 2. Mix the dry ingredients flour, sugar, vanilla sugar, baking powder, and salt in a bowl.
- 3. Knead the butter into the flour mixture until a smooth shortcrust pastry forms.
- 4. Lightly grease the springform pan and line the bottom and a 3-centimeter-high rim with the dough.
- 5. Chill the lined dough base in the refrigerator for 15 minutes.
- 6. Poke many small holes evenly into the dough base using a fork.
- 7. Line the dough base with baking paper and spread dried beans as pie weights on top.
- 8. Preheat the air fryer to 160 °C and blind bake the dough base for 15 minutes, ideally under a splash guard.
- 9. Remove the baking paper and beans and bake the base for another 5 minutes at 160 °C if it is not yet golden brown.
- 10. Let the baked dough base cool down completely.
- 11. Mix the condensed milk and egg yolks at low speed in a bowl.
- 12. Wash an organic lime and grate the zest.
- 13. Squeeze the lime juice and add it slowly to the milk and egg yolk mixture.
- 14. Add the lime zest and mix everything well until a homogeneous filling is formed.
- 15. Pour the lime cream into the cooled dough base.
- 16. Preheat the air fryer for 3 minutes.
- 17. Bake the tart at 150 °C for 10 minutes, but cover it with aluminum foil or a splash guard to reduce air circulation.
- 18. Remove the cover and bake the tart for another 3 minutes at 145 °C.
- 19. Ensure that the cream in the center is still slightly jiggly after baking.
- 20. Let the pan cool in the open drawer of the air fryer.
- 21. Place the tart in the refrigerator for 2 to 3 hours to let it set.
- 22. Note that cooking times may vary slightly depending on the air fryer model.
