Ingredients

Instructions

  1. 1. Calculate all ingredient quantities for a 20-centimeter springform pan.
  2. 2. Mix the dry ingredients flour, sugar, vanilla sugar, baking powder, and salt in a bowl.
  3. 3. Knead the butter into the flour mixture until a smooth shortcrust pastry forms.
  4. 4. Lightly grease the springform pan and line the bottom and a 3-centimeter-high rim with the dough.
  5. 5. Chill the lined dough base in the refrigerator for 15 minutes.
  6. 6. Poke many small holes evenly into the dough base using a fork.
  7. 7. Line the dough base with baking paper and spread dried beans as pie weights on top.
  8. 8. Preheat the air fryer to 160 °C and blind bake the dough base for 15 minutes, ideally under a splash guard.
  9. 9. Remove the baking paper and beans and bake the base for another 5 minutes at 160 °C if it is not yet golden brown.
  10. 10. Let the baked dough base cool down completely.
  11. 11. Mix the condensed milk and egg yolks at low speed in a bowl.
  12. 12. Wash an organic lime and grate the zest.
  13. 13. Squeeze the lime juice and add it slowly to the milk and egg yolk mixture.
  14. 14. Add the lime zest and mix everything well until a homogeneous filling is formed.
  15. 15. Pour the lime cream into the cooled dough base.
  16. 16. Preheat the air fryer for 3 minutes.
  17. 17. Bake the tart at 150 °C for 10 minutes, but cover it with aluminum foil or a splash guard to reduce air circulation.
  18. 18. Remove the cover and bake the tart for another 3 minutes at 145 °C.
  19. 19. Ensure that the cream in the center is still slightly jiggly after baking.
  20. 20. Let the pan cool in the open drawer of the air fryer.
  21. 21. Place the tart in the refrigerator for 2 to 3 hours to let it set.
  22. 22. Note that cooking times may vary slightly depending on the air fryer model.
