  1. 1. Separate the egg into egg white and egg yolk.
  2. 2. Whisk the egg white briefly with a fork.
  3. 3. Mix the egg yolk with one tablespoon of milk.
  4. 4. Wash the plums and dry them.
  5. 5. Halve the plums and remove the pits.
  6. 6. Roll out the puff pastry without removing the baking paper.
  7. 7. Brush the pastry with the whisked egg white.
  8. 8. Top one half of the puff pastry with 16 plum halves.
  9. 9. Fold the other half of the pastry over the plums.
  10. 10. Press the edges of the pastry firmly with a fork.
  11. 11. Cut the pastry and the baking paper between the plums into 16 individual pieces using scissors.
  12. 12. Press all edges of the individual pastries firmly with the fork again.
  13. 13. Poke the tops of the pastries once each with the fork.
  14. 14. Preheat the air fryer for 3 minutes.
  15. 15. Place suitable baking paper in the basket if necessary to prevent burning.
  16. 16. Place 8 pastries in the basket.
  17. 17. Bake the pastries for 10 minutes at 170 °C.
  18. 18. Brush the baked pastries with the egg yolk-milk mixture.
  19. 19. Bake them for a further 4 minutes at 170 °C.
  20. 20. Repeat the process with the remaining 8 pastries.
  21. 21. Place the finished pastries on a cooling rack.
  22. 22. Peel off the small baking paper strips from the bottom.
  23. 23. Let the pastries cool completely.
