🍰 Light Mirabelle Cake from the Air Fryer

Ingredients
- 75 g Butter
- 70 g Sugar
- 1 packet Vanilla Sugar
- 1 Bio Lemon (of the Zest)
- 1 Pinch Salt
- 2 Egg, Size M
- 120 g Wheat Flour Type 405
- 1 tsp Baking Powder
- 250 g Mirabelle Plums
- 35 g Sliced Almonds
- Fat for the Pan
Instructions
- 1. Rinse the mirabelles under running water.
- 2. Dry the fruits with a kitchen towel.
- 3. Halve the mirabelles and remove the pits.
- 4. Beat the butter, sugar, vanilla sugar, lemon zest, and a pinch of salt with a mixer until creamy.
- 5. Stir the eggs into the butter cream.
- 6. Mix the flour with the baking powder in a separate bowl.
- 7. Gently fold the flour mixture into the liquid batter.
- 8. Grease a 20-centimeter (8-inch) springform pan.
- 9. Pour the batter into the prepared pan.
- 10. Smooth the surface of the batter.
- 11. Place the halved mirabelles evenly on top of the batter.
- 12. Sprinkle the cake evenly with sliced almonds.
- 13. Preheat the air fryer for 3 minutes at 160 °C.
- 14. Place the pan into the preheated air fryer.
- 15. Place the splash guard (a small metal or glass cover) over the pan so the almonds do not fly into the heating element.
- 16. Bake the cake at 160 °C for 32 to 35 minutes.
- 17. Let the cake cool slightly in the air fryer basket for a few minutes.
- 18. Remove the springform ring after 5 minutes.
- 19. Turn the cake out onto a cooling rack and let it cool completely.
