  1. 1. Mix the flour, dry yeast, and salt in a bowl.
  2. 2. Add the lukewarm water and oil, then stir until you have a smooth dough.
  3. 3. Knead the dough vigorously for several minutes until it is smooth and no longer sticks to the bowl.
  4. 4. If the dough is still sticky, add a little more oil and knead it again.
  5. 5. Cover the bowl and place the dough in a warm spot.
  6. 6. Wait until the dough volume has increased noticeably.
  7. 7. Dice the tomatoes and the Caciocavallo cheese into small pieces.
  8. 8. Mix the topping ingredients in a separate bowl.
  9. 9. Season the mixture with half of the spice blend, adding more if needed.
  10. 10. Do not add extra salt to the topping, as the cheese and ham are already salty.
  11. 11. Divide the finished dough into four equal portions.
  12. 12. Freeze two of these portions for later use.
  13. 13. Roll out the remaining two portions flat and oval.
  14. 14. Spread the topping evenly over the dough, almost to the edge.
  15. 15. Place the flatbreads on baking paper into the air fryer.
  16. 16. Preheat the air fryer to 180 °C and bake the flatbreads for 15 minutes until crispy.
