  1. 1. Wash the potatoes thoroughly and boil them with the skin in salted water. Let them cool down until they are lukewarm, then peel them and slice them. Also slice the gherkins and the apple thinly and mix everything together in a large bowl.
  2. 2. Whisk all the ingredients for the dressing, along with the contents of the perfectly balanced spice mix and sugar to taste, in a small bowl. Pour the dressing evenly over the potato slices and gently fold it in to avoid breaking the slices.
  3. 3. Let the salad marinate for full flavor for 3 - 4 hours. Before serving, slice the spring onions into rings and mix them into the salad.
