  1. 1. Peel the potatoes and the carrots.
  2. 2. Grate the peeled potatoes and carrots finely.
  3. 3. Also grate the zucchini finely.
  4. 4. Place the grated vegetables on a clean kitchen towel.
  5. 5. Squeeze the towel tightly to remove excess moisture from the vegetables.
  6. 6. Grate the cheese.
  7. 7. Add the dry vegetables and the grated cheese to a large bowl.
  8. 8. Finely chop the spring onions.
  9. 9. Add the chopped spring onions to the vegetable-cheese mixture.
  10. 10. Mix all ingredients in the bowl thoroughly.
  11. 11. Add the flour to the mixture.
  12. 12. Add the beaten egg to the mixture.
  13. 13. Add the garlic powder to the mixture.
  14. 14. Add the onion powder to the mixture.
  15. 15. Season the mixture with salt.
  16. 16. Season the mixture with black pepper.
  17. 17. Mix everything again very well until a homogeneous dough forms.
  18. 18. Preheat the air fryer to 200 °C.
  19. 19. Take about 1/4 cup of the vegetable mixture.
  20. 20. Shape it into a croquette.
  21. 21. Repeat this process with the remaining mixture until all croquettes are shaped.
  22. 22. Lightly spray the croquettes with cooking spray.
  23. 23. Place the croquettes side by side in a single layer in the air fryer basket.
  24. 24. Do not overcrowd the basket so that the hot air can circulate well.
  25. 25. Cook the croquettes at 200 °C for 10 to 12 minutes.
  26. 26. Turn the croquettes after half the cooking time (i.e., after approx. 5-6 minutes).
  27. 27. Remove the croquettes when they are golden brown and crispy.
