🍽️ Crispy Vegetable Croquettes from the Air Fryer

Ingredients
- 2 m.-large potato(es)
- 1 large carrot(s)
- 1 small zucchini
- 0.5 cup cheddar cheese
- 0.25 cup parmesan, grated
- 2 spring onion(s)
- 0.25 cup flour
- 1 m.-large egg(s)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 0.5 tsp pepper, black
- n. B. fat (oil spray for air fryer)
Instructions
- 1. Peel the potatoes and the carrots.
- 2. Grate the peeled potatoes and carrots finely.
- 3. Also grate the zucchini finely.
- 4. Place the grated vegetables on a clean kitchen towel.
- 5. Squeeze the towel tightly to remove excess moisture from the vegetables.
- 6. Grate the cheese.
- 7. Add the dry vegetables and the grated cheese to a large bowl.
- 8. Finely chop the spring onions.
- 9. Add the chopped spring onions to the vegetable-cheese mixture.
- 10. Mix all ingredients in the bowl thoroughly.
- 11. Add the flour to the mixture.
- 12. Add the beaten egg to the mixture.
- 13. Add the garlic powder to the mixture.
- 14. Add the onion powder to the mixture.
- 15. Season the mixture with salt.
- 16. Season the mixture with black pepper.
- 17. Mix everything again very well until a homogeneous dough forms.
- 18. Preheat the air fryer to 200 °C.
- 19. Take about 1/4 cup of the vegetable mixture.
- 20. Shape it into a croquette.
- 21. Repeat this process with the remaining mixture until all croquettes are shaped.
- 22. Lightly spray the croquettes with cooking spray.
- 23. Place the croquettes side by side in a single layer in the air fryer basket.
- 24. Do not overcrowd the basket so that the hot air can circulate well.
- 25. Cook the croquettes at 200 °C for 10 to 12 minutes.
- 26. Turn the croquettes after half the cooking time (i.e., after approx. 5-6 minutes).
- 27. Remove the croquettes when they are golden brown and crispy.
