🍽️ Crispy Pork Belly Chicharrones with Fresh Guacamole

Ingredients
- 1 kg pork belly
- 1 onion
- 2 garlic cloves
- 3 bay leaves
- 1 tbsp salt
- 1 tsp peppercorns
- some oil
- 2 avocados
- 0.5 red onion
- 1 small tomato
- 2 tbsp cilantro (fresh, or parsley)
- 1 lime
- 1 jalapeño
- salt and pepper
Instructions
- 1. Cut the pork belly into slices about 4 cm thick.
- 2. Peel the onion and cut it into large quarters.
- 3. Peel the garlic and press it lightly with the flat side of a knife to release the flavor.
- 4. Bring a sufficient amount of water to a boil in a large pot.
- 5. Add the pork belly slices, onion pieces, garlic, bay leaves, and pepper to the boiling water.
- 6. Simmer the meat over medium heat for 45 to 60 minutes.
- 7. Cut the avocados in half lengthwise and remove the pit.
- 8. Scoop the avocado flesh into a bowl.
- 9. Squeeze the juice of a lime directly over the avocado flesh.
- 10. Mash the avocado pieces into a fine puree using a fork.
- 11. Core the tomato and finely dice the firm flesh.
- 12. Finely chop the cilantro or parsley.
- 13. Cut the onion into fine dice.
- 14. Mince the garlic very finely.
- 15. Core the jalapeño and cut it into fine dice.
- 16. Add all prepared ingredients (tomato, herbs, onion, garlic, jalapeño) to the avocado puree.
- 17. Mix everything thoroughly.
- 18. Season the guacamole generously with salt and a little pepper.
- 19. Remove the cooked pork belly slices from the broth.
- 20. Pat the meat completely dry with kitchen paper.
- 21. Preheat the air fryer on the highest setting for 10 minutes.
- 22. Place the pork belly slices in the basket and spread them out as much as possible to allow air circulation.
- 23. Set the air fryer to 200 °C and set a timer for 20 minutes.
- 24. Turn the pork belly slices with tongs after 10 minutes.
- 25. Check if the meat is crispy. If not, return it to the air fryer for another 5 to 10 minutes on the highest setting and turn it again after half the time.
- 26. Serve the crispy chicharrones immediately with the guacamole.
