  1. 1. Cut the pork belly into slices about 4 cm thick.
  2. 2. Peel the onion and cut it into large quarters.
  3. 3. Peel the garlic and press it lightly with the flat side of a knife to release the flavor.
  4. 4. Bring a sufficient amount of water to a boil in a large pot.
  5. 5. Add the pork belly slices, onion pieces, garlic, bay leaves, and pepper to the boiling water.
  6. 6. Simmer the meat over medium heat for 45 to 60 minutes.
  7. 7. Cut the avocados in half lengthwise and remove the pit.
  8. 8. Scoop the avocado flesh into a bowl.
  9. 9. Squeeze the juice of a lime directly over the avocado flesh.
  10. 10. Mash the avocado pieces into a fine puree using a fork.
  11. 11. Core the tomato and finely dice the firm flesh.
  12. 12. Finely chop the cilantro or parsley.
  13. 13. Cut the onion into fine dice.
  14. 14. Mince the garlic very finely.
  15. 15. Core the jalapeño and cut it into fine dice.
  16. 16. Add all prepared ingredients (tomato, herbs, onion, garlic, jalapeño) to the avocado puree.
  17. 17. Mix everything thoroughly.
  18. 18. Season the guacamole generously with salt and a little pepper.
  19. 19. Remove the cooked pork belly slices from the broth.
  20. 20. Pat the meat completely dry with kitchen paper.
  21. 21. Preheat the air fryer on the highest setting for 10 minutes.
  22. 22. Place the pork belly slices in the basket and spread them out as much as possible to allow air circulation.
  23. 23. Set the air fryer to 200 °C and set a timer for 20 minutes.
  24. 24. Turn the pork belly slices with tongs after 10 minutes.
  25. 25. Check if the meat is crispy. If not, return it to the air fryer for another 5 to 10 minutes on the highest setting and turn it again after half the time.
  26. 26. Serve the crispy chicharrones immediately with the guacamole.
