  1. 1. Boil potatoes in plenty of salted water until tender.
  2. 2. Drain the water and let the potatoes steam dry for a moment.
  3. 3. Peel the potatoes and press or mash them into a bowl.
  4. 4. Make sure there are no lumps left in the mixture.
  5. 5. Separate two eggs and add only the yolks to the potato mixture.
  6. 6. Add butter in small flakes to the mixture.
  7. 7. Season the mixture with salt and grated nutmeg.
  8. 8. Mix everything together thoroughly.
  9. 9. Add potato starch and work it into a smooth mixture.
  10. 10. Whisk two egg whites with one whole egg and a little milk until smooth.
  11. 11. Prepare three plates or shallow bowls.
  12. 12. Fill the first plate with flour.
  13. 13. Fill the second plate with the prepared egg-milk mixture.
  14. 14. Fill the third plate with breadcrumbs.
  15. 15. Preheat the air fryer to 190 °C.
  16. 16. Scoop off about one tablespoon of the potato mixture.
  17. 17. Shape the portion into a ball in your hands.
  18. 18. Then roll the ball into an oval shape.
  19. 19. Gently press the ends of the croquette into shape.
  20. 20. Roll the croquette first in the flour.
  21. 21. Then dip it into the egg-milk mixture.
  22. 22. Finally, roll it in the breadcrumbs.
  23. 23. Make sure the croquette is completely covered.
  24. 24. This helps the breadcrumbs stick better later on.
  25. 25. Repeat the process with the remaining mixture.
  26. 26. Place the finished croquettes in the air fryer basket.
  27. 27. Lightly mist the croquettes with oil using a spray bottle.
  28. 28. Alternatively, you can brush the croquettes carefully with oil.
  29. 29. Cook the croquettes in the preheated device for approx. 10 minutes until crispy.
