🍽️ Crispy Potato Croquettes from the Air Fryer

Ingredients
- 500 g potatoes, floury
- 3 egg(s)
- 50 g butter
- salt
- nutmeg
- 40 g potato starch (35 - 40 g)
- a little milk
- breadcrumbs
- oil
Instructions
- 1. Boil potatoes in plenty of salted water until tender.
- 2. Drain the water and let the potatoes steam dry for a moment.
- 3. Peel the potatoes and press or mash them into a bowl.
- 4. Make sure there are no lumps left in the mixture.
- 5. Separate two eggs and add only the yolks to the potato mixture.
- 6. Add butter in small flakes to the mixture.
- 7. Season the mixture with salt and grated nutmeg.
- 8. Mix everything together thoroughly.
- 9. Add potato starch and work it into a smooth mixture.
- 10. Whisk two egg whites with one whole egg and a little milk until smooth.
- 11. Prepare three plates or shallow bowls.
- 12. Fill the first plate with flour.
- 13. Fill the second plate with the prepared egg-milk mixture.
- 14. Fill the third plate with breadcrumbs.
- 15. Preheat the air fryer to 190 °C.
- 16. Scoop off about one tablespoon of the potato mixture.
- 17. Shape the portion into a ball in your hands.
- 18. Then roll the ball into an oval shape.
- 19. Gently press the ends of the croquette into shape.
- 20. Roll the croquette first in the flour.
- 21. Then dip it into the egg-milk mixture.
- 22. Finally, roll it in the breadcrumbs.
- 23. Make sure the croquette is completely covered.
- 24. This helps the breadcrumbs stick better later on.
- 25. Repeat the process with the remaining mixture.
- 26. Place the finished croquettes in the air fryer basket.
- 27. Lightly mist the croquettes with oil using a spray bottle.
- 28. Alternatively, you can brush the croquettes carefully with oil.
- 29. Cook the croquettes in the preheated device for approx. 10 minutes until crispy.
