  1. 1. Peel the onions and chop them finely.
  2. 2. Add the minced meat, onions, spices, and one whole egg to a bowl.
  3. 3. Mix the ingredients vigorously by hand until a homogeneous mass forms.
  4. 4. Slice the tomatoes into thick rounds.
  5. 5. Slice the gherkins lengthwise into thin slices.
  6. 6. Preheat the air fryer to 180 °C.
  7. 7. Roll out the pizza dough thinly on a floured surface.
  8. 8. Cut out several round circles from the dough.
  9. 9. Brush one half of each dough circle thinly with mustard.
  10. 10. Place at least two to three tablespoons of the minced meat mixture on the unbrushed half.
  11. 11. Distribute the tomato and gherkin slices evenly over the meat.
  12. 12. Sprinkle grated cheese over the filling.
  13. 13. Fold the mustard-brushed dough side over the filling.
  14. 14. Use the egg white of the remaining egg to brush the edges of the pocket.
  15. 15. Press the edges firmly with the tines of a fork to seal them.
  16. 16. Brush the top of the pockets with the remaining egg yolk.
  17. 17. Place the pockets in the air fryer and bake them crispy for 15 to 20 minutes at 180 °C.
