🥗 Beetroot Salad with High Protein

Ingredients
- 200 g cream cheese, grainy (light)
- 50 g beetroot (vacuum-packed)
- 75 g feta cheese (light)
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp mustard
- salt to taste
- pepper to taste
- 10 g walnuts
- 10 g pomegranate seeds
- basil to taste
Instructions
- 1. Cut the beetroot into thin strips or small cubes. Mix them in a bowl with curd cheese and crumbled feta. Whisk all the dressing ingredients in a small bowl, pour them over the salad, and stir everything gently but thoroughly.
- 2. Garnish the salad with walnuts, pomegranate seeds, and fresh basil leaves.
