🍽️ Grandma Magda's Classic Goulash

Ingredients
- 2 tbsp ghee
- 4 large onion(s) (diced)
- 2 tbsp tomato paste
- 1 carrot(s) (diced)
- 50 g celeriac (diced)
- 0.7 Liter red wine
- 1 kg beef (diced)
- 300 ml beef broth
- 1 tsp, heaped paprika powder, sweet
- 1 tsp, heaped paprika powder, hot
- salt and pepper
- 2 bay leaves
- optional thickener
Instructions
- 1. Dice the onions into cubes that are about half a centimeter in size.
- 2. Finely chop the carrot and celery.
- 3. Heat two tablespoons of ghee in a pan.
- 4. Fry the onion, carrot, and celery vegetables vigorously.
- 5. Stir the tomato paste into the vegetables.
- 6. Simmer the mixture briefly until it forms a uniform mass.
- 7. Ensure that the mixture sticks slightly to the bottom of the pan.
- 8. Toast the paprika powder briefly without burning it.
- 9. Deglaze the goulash with red wine and broth.
- 10. Bring the liquid to a boil.
- 11. Add the diced meat.
- 12. Bring the goulash back to a boil.
- 13. Add the bay leaves to the pan.
- 14. Place the lid on the pan.
- 15. Simmer the goulash on low heat for about two hours.
- 16. Check if the sauce is too runny.
- 17. Stir one tablespoon of cornstarch into cold water.
- 18. Add the starch solution to the goulash if it needs thickening.
- 19. Season the goulash with salt and pepper.
- 20. Remove the bay leaves before serving.
