🍽️ Coconut Lachs from the Air Fryer

Ingredients
- 180 g salmon fillet(s) (fresh)
- 200 ml coconut milk
- 1 tbsp soy sauce
- salt and pepper (from the mill)
- 1 shallot(s)
- 1 tbsp lemon juice (freshly squeezed)
- 100 g rice (cooked)
- 6 cocktail tomatoes
- chives
Instructions
- 1. Cut the salmon fillet into approx. 3 x 3 cm cubes.
- 2. Pour the coconut milk into a heatproof dish.
- 3. Peel the shallot and slice it thinly.
- 4. Add the shallot slices to the coconut milk.
- 5. Stir in the soy sauce and lemon juice.
- 6. Add the salmon cubes and the pre-cooked rice to the dish.
- 7. Season everything with salt and pepper.
- 8. Mix all ingredients thoroughly.
- 9. Preheat the air fryer to 180 °C.
- 10. Cook the dish in the air fryer for 20 to 22 minutes.
- 11. Check after 18 minutes to see if the salmon is cooked through.
- 12. Portion the dish into deep plates.
- 13. Garnish with halved cocktail tomatoes and fresh chives.
