  1. 1. Cut the salmon fillet into approx. 3 x 3 cm cubes.
  2. 2. Pour the coconut milk into a heatproof dish.
  3. 3. Peel the shallot and slice it thinly.
  4. 4. Add the shallot slices to the coconut milk.
  5. 5. Stir in the soy sauce and lemon juice.
  6. 6. Add the salmon cubes and the pre-cooked rice to the dish.
  7. 7. Season everything with salt and pepper.
  8. 8. Mix all ingredients thoroughly.
  9. 9. Preheat the air fryer to 180 °C.
  10. 10. Cook the dish in the air fryer for 20 to 22 minutes.
  11. 11. Check after 18 minutes to see if the salmon is cooked through.
  12. 12. Portion the dish into deep plates.
  13. 13. Garnish with halved cocktail tomatoes and fresh chives.
